Protein Onion Rings

Healthy onion rings is one thing, but onion rings filled with protein is my dream come true! This simple recipe has seriously changed dinner in my house! Quest Nutrition’s newest product, Protein Chips, are a dieter’s best friend. I took it one step further and created a healthy onion ring.

 

TheFittChick Crispy Baked Protein Onion Rings

 

INGREDIENTS:

–       1 large sweet onion, sliced into ½“ slices

–       1 egg or 3 egg whites

–       2 bags Quest Protein Potato Chips, crushed

–       2 cups unsweetened almond milk

–       2 TBSP parmesan cheese (optional)

–       ½ tsp sea salt

–       ½ tsp pepper

 

DIRECTIONS:

6-24 HOURS BEFORE:

  1. Mix almond milk with sea salt and pepper,

  2. Place sliced onions into an airtight container with almond milk mixture for 6-24 hours.

DAY OF:

  1. Preheat oven to 450 or turn on air air fryer to 390.

  2. Place egg whites in one bowl, and Quest Chips mixed with parmesan cheese in another.

  3. Dip onion rings into the egg mixture and coat well one at a time.

  4. Then dip the rings into the potato chip mixture and coat each ring thoroughly.

  5. Place coated rings on a baking sheet lined with parchment paper and bake for 10-12 minutes or until onion rings are browned and crispy (or place in air fryer for 10 minutes).

  6. Serve plain or serve with your favorite dipping sauce

  7. Devour!

SUBSTITUTIONS:

–       Fat-free buttermilk can be used instead of almond mlilk.

–       Panko breadcrumbs work great if you are out of Quest Protein Chips (but don’t run out, they are amazing)!
