This was such a great quick & simple side dish! I love baking, roasting, or grilling as many veggies as I can to add to the dinner table! This week on Monday I made asparagus, onions, mushrooms, broccoli, and green beans. Monday night meal prep has really helped me be prepared for the rest of the week. It is a great way to always have something to reach for when you get hungry or need a quick veggie to add to lunch or dinner.
This is one side dish you should definitely try out! Whether you are cooking for a family of 4 or having 20 guests over for a BBQ, this recipe will be a hit!
Soy Marinated Mushroom & onions…
Ingredients:
– 2 large purple onions
– 2 packages portabella mushrooms
– low sodium (gluten-free) soy sauce
Directions:
1. Slice your onion VERY thick and wash your mushrooms well.
2. Soak your mushrooms and onions in soy sauce, and let them marinate for a few hours or overnight.
3. Place your mushrooms and onions on skews.
4. Grill at medium heat for 30-40 minutes, depending on how well done you like your veggies.
5. Enjoy!
TIPS & Tweaks:
~ I like to put the onions on the grill first because they take longer to get well done.
~ This recipe will work with most vegetables.
