Huge salads are one of my favorite go-to meals for almost anytime of day!  I load up on huge amounts of veggies and protein that keep me full and satisfied.  Most people think eating salads is the perfect way to start losing weight.  Unfortunately, whether you are making your salad at home or ordering it from your favorite restaurant, a dinner size portion of salad can run you close to 1,000 calories or more.

 

A Greek salad is often one of the better salad choices, but that still doesn’t mean it’s totally guilt free. With a focus on fresh vegetables and high-quality flavorings, you can enjoy a huge, healthy salad that is filling, while still being low in calories.

 

I am obsessed right now with my healthy twist on the traditional Greek salad.  Not only is it full of flavorful ingredients, but it is low-cal and “unbutton my pants” filling.  Try this recipe immediately!  You may start making it as much as me!

 

TheFittChick Quinoa Greek Salad with Grilled Shrimp

INGREDIENTS:
– 150 grams spinach (or lettuce of
your choice), chopped
– 2 oz grape tomatoes, halved
– 4 oz grilled shrimp
– 1 oz fat-free feta cheese
– 50 grams avocado, diced
– 50 grams sliced cucumber
– 5 green olives, sliced
– 3 TBSP cooked quinoa
– hot peppers (optional)
– 20 grams Red onion, sliced and
grilled until caramelized
– 3 TBSP Bolthouse Farms Cilantro
Avocado Yogurt Dressing

DIRECTIONS:
1. Slice red onion and sauté till caramelized. Set aside to cool.
2. Make one serving one quinoa using beef or chicken broth for liquid (this will add flavor).
3. Season shrimp and grill. Set aside.
4. Chop spinach and add tomatoes, quinoa, avocado, onion, olives, hot peppers, and feta.
5. Top with shrimp and dressing!
6. Enjoy!

TIPS & TWEAKS
~ Save calories by using balsamic vinegar for a salad dressing.
~ This salad tastes great using any protein source.
~ Traditionally a Greek salad uses olive oil, seasoning, and lemon for a dressing. This is another option to top this already flavorful meal!
