Easy Creamy Cauliflower Mashed Potatoes

How many things can you do with Greek yogurt? You will never open my fridge and not be able to find a huge container of Oikos Greek Yogurt. I can literally use it in every meal of the day! Whether its TheFittChick protein pancakes, Tzatziki, twice baked potatoes, salad dressing, or dips, it’s the perfect way to add protein to any meal!

 

Using Greek yogurt in place of cream and butter in mashed potatoes has been my secret weapon for years.  The best part is that this weight loss swap saves you around 100 calories and 12 grams of fat per serving. And lets face it, who only eats one serving?

Eat Yourself Skinny!

 

 TheFittChick Cauliflower Mashed Potatoes

 

INGREDIENTS:

–       1 head cauliflower (or 1 bag cauliflower florets)

–       1 cup chicken broth (or veggie broth)

–       3-4 TBSP 0% Greek yogurt (optional)

–       1 TBSP fresh Chives (or dried)

–       1 Dorot garlic cube or 1 TBSP fresh minced garlic

–       Sea Salt and pepper to taste

–       ½ tsp butter extract (optional)

 

DIRECTIONS:

  1. Cut up a head of cauliflower into pieces and throw it in a pot.

  2. Add 1 cup chicken stock, chopped garlic, salt and pepper.

  3. Once the chicken stock comes to a boil, cover and let simmer for 20 minutes.

  4. Mash the softened cauliflower with a potato masher or transfer to your Cuisinart.

  5. Add Greek yogurt to moisten the consistency.

  6. Once you are ready to serve, put chives on top and add extra seasonings to your liking.

MODIFICATIONS:

o   I like to add I can’t believe its not butter spray, extra sea salt, and top with Parmesan cheese.

o   I always use a steamable bag of cauliflower florets to speed up this recipe.  Once microwaved, I mash and add remaining ingredients.  A perfect side dish in under 5 minutes!
