Protein Packed Chocolate Chip Muffin Cake

I have such a passion for spending hours in my kitchen creating sweet treats that taste delicious and are filled with protein. This recipe started out as an idea for a scone, and morphed into a moist and yummy cake. For less then 200 calories and over 20 grams of protein, who wouldn’t want to start or end their day with a warm treat where you can actually eat the entire thing. This recipe is perfect for everyone in your family. It is definitely worth trying!

 

“Eat the Whole” Chocolate Chip Mufin Cake

 

INGREDIENTS:

–       35 grams Quest Protein Multi Purpose Baking Mix

–       2 TBSP Trader Joe’s almond meal

–       ¼ cup granulated Truvia (less if you don’t like very sweet)

–       ½ tsp baking soda

–       ½ tsp baking powder

–       1 egg

–       2 TBSP unsweetened applesauce

–       1 TBSP sugar-free chocolate chips or blueberries

 

DIRECTIONS:

  1. Preheat oven to 350.

  2. Combine the protein powder, almond meal, baking soda, baking powder, and Truvia.

  3. Then add egg and applesauce and mix until well combined.

  4. Stir in chocolate chips or blueberries.

  5. Pour batter into 2 ramekins sprayed with nonstick baking spray.

  6. Bake for 20-22 minutes or until set.

  7. Enjoy!

MODIFICATIONS:

~ Change up the flavor of this cake with raisins, nuts, berries, or apples.
