Banana Chocolate Chip Muffins

Fresh out of the oven is 2015’s first healthy recipe. This one was for my kids, but can easily be adapted to a weight loss recipe with a few tweaks (that I will provide). Childhood obesity has more than doubled in children and quadrupled in adolescents in the past 30 years. Healthy lifestyle habits, including healthy eating and physical activity, can lower the risk of becoming obese and developing related diseases, and it starts at home!

 

With a new year, comes resolutions. New Year’s resolutions aren’t just for adults, they’re for kids too! If you’d like to make some positive changes in your life, or if you are a parent who would like to encourage their children to make positive changes in their life, making resolutions for 2015 is a great place to start! While an adult’s New Year’s resolution may include things like losing weight, a child’s resolutions can be to make healthier choices.

 

My 2 boys just devoured these protein filled chocolate chip banana muffins! Get your kids in the kitchen today and make these quick and simple muffins! Children love knowing they are eating healthy and making smart choices. Make 2015 the year you get healthy as a family!

FittKids Protein Banana Chocolate Chip Muffins

INGREDIENTS:

–       1 cup oats, blended to flour

–       1 cup whole oats

–       3 ripe bananas

–       2 eggs

–       1 cup 0% plain Greek yogurt

–       ¼ cup honey

–       ½ tsp baking soda

–       1 ½ tsp baking powder

–       2 TBSP sweetener of choice (I use granulated Truvia)

–       ½ cup mini chocolate chips

 

DIRECTIONS:

  1. Blend one cup of oatmeal to flour.

  2. Add in extra cup of oats, Truvia, baking soda and baking powder. Then set aside.

  3. Mix bananas, eggs, yogurt, and honey till smooth.

  4. Add in dry mixture and blend till well combined.

  5. Pour batter into muffin liners sprayed with non-stick spray.

  6. Bake for 25 minutes (5 minutes longer for a more cake-like consistency).

  7. Watch your kids devour them!

MODIFICATIONS:

~ For those following TheFittChick plan (or a healthy lifestyle) substitute honey for sugar-free honey or Walden Farms zero calorie syrup, use 2 bananas instead of 3 to cut calories, use sugar-free chocolate chips or cocoa nibs, and use use 2 egg whites in place of one of the eggs.
